Happy National Cow Appreciation Day!

Laura and I are Co-Chairs of our "Fun Committee" at work. We love to keep up the morale...and celebrate random holidays.

This month's random holiday is National Cow Appreciation Day. In honor of this day, Laura and I had many fun things planned, one of which was fun "cow pattern" cupcakes.


These cupcakes are not healthy, but as part of a healthy diet are a fun treat to be enjoyed!

To make these moo-valous treats, I started out with a Funfetti cake mix and topped them off with a whipped vanilla icing. In order to get the cow pattern I used Fruit Roll Ups. Note: To successfully unroll a Fruit Roll Up without tearing it, you must refrigerate it! Room temp Roll Ups are a mess!
I placed the Roll Ups flat on my Silpat and just used a small sharp knife to carve out random patterns. I might suggest having a cow pattern to look at when you are doing this. I did not, and some of my cupcakes look like happy and sad faces. Simply the lay the pieces of cut Roll Up on your cupcakes and voila, you have a cow cupcake!
